Recipe: zucchini cakes
Aug. 3rd, 2008 08:28 pmI just wanted to brag about this recipe because I think they turned out pretty well. I got the basic recipe here which is a lovely food blog if you're looking for one.
So here's what my evening looked like. I would say don't add any salt; if you use the cheese, no extra salt is needed. I also probably should have made them thinner to get them crisper. You can see the middle is still a bit fluffy. And the teriyaki sauce I used for dipping was unnecessary. The suggested ranch dressing would have been perfect.
These are cool because you could work in so many different things. Shredded carrots or radishes, to make it like an entire fried bit of salad bar. Yum yum.
I did other things tonight, BTW! I've been Wii Fitting it up, reading, doing some shopping, and buying a new backpack online. OK, so it wasn't the most riveting day. But I got to watch some QI and eat some fried goodness. Life is pretty much awesome.
