Recipe: Winter Chicken Salad
Oct. 23rd, 2008 09:35 pmOK, this salad doesn't exactly come from nothing, but it is a pretty impressive rags-to-riches story. It's something you can throw together with barely a coherent pantry of ingredients.
First boil some pasta that is a cute shape. I made only half a box.
Also, fry up some bacon. I had to use turkey bacon, as I no longer eat pork. I am sad. But I've dealt with it.
When your bacon or "bacon" is done, fry up some chicken in the leftover grease.
Also defrost a box of frozen spinach.
Oh, and chop some sundried tomatoes.
Do you see how it's all little pieces of foodstuffs? Wait till you bring them together. Chop up the bacon and chicken, toss all the goodies together and pour on some sauce or dressing. I used honey teriyaki.
The reason this is awesome is because it supplies you with two kinds of protein plus the iron-rific spinach. And pasta is there because I can't not have a starch present.
